When Josefina Howard first opened in 1984, she didn’t mind that the best way wasn’t always the easiest. When creating the menu, she decided the guacamole would be made table side so guests could see the freshest avocados being selected. When creating her signature Pomegranate Margarita, she didn’t have the bartenders pour bottled juice into the cocktail; she had them squeeze Pomegranates to create the freshest Margarita. The famed Mole sauce coating enchiladas and chicken specialties didn’t have a bunch of ingredients and take a long time to prepare, it had twenty-seven ingredients, and took over six hours to prepare.
Many of these experiences and stories can be heard at the bar and in the dining room, where a staff who has personally learned the traditions continue to create culinary specialties and libations guests have enjoyed for over thirty four years.
